Pumpkin Granola

Fall weather brings cool breezes and the urge to bake and cook all things apple, cinnamon, pumpkin or just plain sweet and yummy.

Pumpkin Granola

4 Cups Rolled OatsCWPumpkinGranola

1 tsp Cinnamon

1/4 tsp Nutmeg

1/8 tsp Ginger

1/8 tsp Allspice

1/4 tsp Salt

1/4 Cup Coconut Oil

1/4 Cup Honey

1/2 Cup Pumpkin Puree

1 tsp Vanilla

1/2 Cup chopped Almonds

1/4 Cup Pumpkin Seeds

1/4 Cup ground Flax seed

1/2 Shredded Coconut

1/4 Cup dried, chopped Mangoes

Directions: Preheat oven to 250*. Line cookie sheet with parchment paper.

Combine oats and spices. Melt coconut oil and honey in a sauce pan. Remove from heat and add vanilla. Stir in pumpkin puree. Pour liquid over oat mixture and stir to coat well.

Spread evenly on a cookie and bake for 1 hour. Stir at 15 mins and 30 mins. Add all fruits, seeds and nuts at 45 mins. Turn oven off at 1 hour and let it cool in the oven for 15 mins. Remove from oven and completely cool before putting in an airtight container.
