Pumpkin Swirl Cheesecake

I love cheesecake and I love making them. I prefer a swirl rather than an entire pumpkin flavor because I love the taste of both flavors. Enjoy!

Confession time- we ate the first one before we got the finished product picture so we had to make another…darn! 😉

1 Cup Graham Cracker crumbs

2 Tbs Sugar

3 Tbs Butter, melted

3 Packages 8 oz. Cream Cheese

1 Cup Sugar

1 tps Vanilla

3 large Eggs

8 oz. Pumpkin Puree

1 1/2 tsp Pumpkin Spices (1 tsp Cinnamon, 1/4 tsp Ginger and 1/4 tsp Nutmeg)

Directions:  Crust – In a small bowl mix Graham Cracker crumbs, sugar and butter. Grease the bottom of a 9″ spring form pan. Press crumb mixture into the bottom of the pan and set aside.

Filling – Mix together cream cheese, 3/4 cup sugar and vanilla. Mix in eggs one at a time. Separate the filling into two bowls. To one of the bowls add remaining 1/4 cup sugar, pumpkin puree and spices.

To swirl – Pour half of the plain filling over the crust and smooth it out to the sides. Add 2/3 of the pumpkin filling and smooth to the sides. Do the same with the remaining plain filling. With the remaining pumpkin filling, drop spoonfuls evenly over the last layer. Smooth out a little, then use a knife to swirl the two colors. Don’t over do it, the colors will blend.

*Note- I don’t usually care if my personal cheesecake has a crack across the top, but when I make them for someone else, I do. To avoid this, place your full spring form pan onto a baking sheet and add enough water to the baking sheet to almost fill it. This will add moisture when baking and it won’t crack.

Bake at 325* for 55 minutes. Remove from oven and cool for 10 minutes. Use a knife around the edges to loosen crust. Cool 1 hour more before putting in the refrigerator to chill for several hours or overnight.

Serve chilled.

Flu Shot Alternative

It’s that time of the year when doctors and the news channels are all pushing flu shots. They say this is going to be the worst year ever. Everyone should get a flu shot.

I have never gotten a flu shot, no one in my household has ever gotten a flu shot and I don’t remember anyone ever getting the flu. I personally have had the flu two times that I can remember. Once in my late teens and again in my adulthood but I don’t remember when, it’s been a while.

My cold/allergy/flu preventative is my  Super Healthy Tea. Along with some basic healthy living, we are able to build our immune system to stand up against colds, allergies and even the flu. As soon as I start hearing adds for flu shots, I start adding more of this:

Drink plenty of fluids. Water, warm tea, chicken soup and OJ with a little ACV.

Get plenty of rest. 7-8 hours a night is suggested for adults.

A healthy diet. Eating a good variety of mostly raw and real foods with limited processed foods, sugars and very limited fast food if at all.

Exercise. It can be a daily walk, bike ride, tennis…whatever gets us moving and gets our heart rate up a little.

Before the Holidays – 2 Weeks Out

Preparing for the Holidays in Florida means getting ready inside and out. I usually start  two weeks before Thanksgiving week with any lingering projects/repairs and the outside chores, then move inside. The week before Thanksgiving is deep cleaning, usually cleaning out cabinets and drawers, washing windows and maybe the upholstery. The week of Thanksgiving is all about shopping, baking, crafts, decorating, friends, family and fun!

This week I’m working on this years “two weeks before” list. This includes painting the bathrooms and a doorway and maybe replacing some grout in the hallways. I started sanding and caulking the bathrooms earlier this year but never finished. I’ve been a little busy.

I’ve already started the outside chores this week with cutting the grass for the last time until Spring and making a fire to clean out the fire pit. I started trimming bushes, digging up weeds and raking leaves. I’ll let the chickens help with the weeding, they’re good at digging up weeds. Then it all goes in the compost pile.

I’ll be cleaning out the animal houses and  I might put lights in the coop. I’m not sure yet because since an earlier post where I talked about putting lights in the coop, I’ve been getting more eggs. Hmmm. I think they heard me talking about it. 🙂

I have lots to do, I better get busy.
