Eddie and Robin’s Mediterranean Lamb Stir Fry

Hello, I have taken over my mother’s blog temporarily to give you all a new recipe that we thought was quite delicious. She has no idea I’m doing this, so, uh, Merry Christmas? My brother and I made this dish and we hope you enjoy it as much as we did!

Ingredients:

Angel Hair Noodles
1 1/4 lbs of lamb (veal for stew works best)
1 Red Onion
3 Bell Peppers (of various colours for best flavour)lambfrystrip
1 box Cherry Tomatoes
4 oz Goat Cheese
Basil
Thyme
Paprika
Garlic powder
Salt
Pepper
1/2 cup Pomegranate Red Wine Vinegar
1/2 cup Extra Virgin Olive Oil
1/3 cup Spicy Mustard
1/2 cup Teriyaki Sauce


Instructions:

Boil water for noodles first. As soon as the water is done boiling, stick the noodles in and cook until desired noodle texture.
Chop the lamb into chunks (if you didn’t get the prechopped veal for stew). Start cooking this on a high temperature in the oil, vinegar, teriyaki sauce, salt, pepper and garlic. Let this cook for a little while. Chop the red onion into chunks or strips and then put that into the pan. Cover the pan while it is cooking.
Chop the Bell Peppers while the onion softens and then stir them in with the spicy mustard, paprika, thyme and basil. Stir in the goat cheese and cover until it melts into the sauce.
Once the goat cheese is melted put in the cherry tomatoes and stop cooking it.
Serve the stir fry and sauce over the noodles and enjoy!

 

Scrumptious Pumpkin French Toast

5 eggs

1/4 Cup Milk or water

1/4 Cup Pumpkin puree

1/2 tsp Vanilla

3 Tbs Sweetener of choice (honey, maple syrup, brown sugar)

3 tsp Pumpkin Spices- (1 tsp Cinnamon, 1/2 tsp Ginger, 1/4 tsp Clove, 1/4 tsp Nutmeg)

8-10 slices of bread of choice  (I cut a couple pieces in 3rd’s before dipping to make french toast sticks for my little ones).CWFrenchToast

~Beat together all ingredients with a whisk. Dip bread to cover both sides and shake off extra mix. Bake on a buttered griddle about 350* for 2-4 minutes on each side or until golden brown.

Serve with warm syrup, whipped cream or ice cream. YUM!
